Cinnamon oolong tea is renowned for its unique blend of spicy and floral notes, attributed to its volatile aromatic compounds. However, these compounds are susceptible to degradation during processing and storage, leading to a loss of aroma and overall tea quality. Encapsulation using cyclodextrins, particularly HP-β-CD, offers a promising method for protecting these volatile compounds. HP-β-CD has been widely studied for its ability to form stable inclusion complexes with various guest molecules, including volatile organic compounds.
Encapsulation Process:
Tea samples were immersed in the HP-β-CD solution, ensuring complete coverage. The mixture was then subjected to mild agitation to facilitate the formation of inclusion complexes. After a set period, the tea samples were filtered and dried under vacuum.
Analysis of Aroma Compounds:
Gas chromatography-mass spectrometry (GC-MS) was used to analyze the aromatic profile of the tea samples before and after encapsulation. Key volatile compounds such as cinnamaldehyde, linalool, and geraniol were quantified.
Results and Discussion
Stability During Storage:
The treated tea samples were stored for six months under ambient conditions. Periodic analysis revealed that the HP-β-CD-treated samples retained a higher concentration of key aromatic compounds compared to untreated samples. This indicates that HP-β-CD provides a protective effect, likely due to the formation of inclusion complexes that stabilize the volatile compounds.
Sensory Evaluation:
A panel of trained sensory evaluators assessed the aroma quality of the tea samples. The HP-β-CD-treated tea was consistently rated higher in aroma intensity and freshness compared to the untreated tea, further supporting the analytical findings.
Conclusion
HP-β-CD is effective in protecting the aroma of cinnamon oolong tea during storage. The encapsulation of volatile compounds in HP-β-CD inclusion complexes reduces their degradation, maintaining the tea's distinctive aroma profile. This study demonstrates the potential of HP-β-CD as a natural and efficient method for aroma preservation in aromatic teas, offering significant benefits for the tea industry in terms of product quality and consumer satisfaction.
